My Name Is Linda Chisholm........ introducing "Taste Buds Gluten Free Take Away Foods", I am in the process of writing a business plan for a new specialty food shop in Ottawa, Canada. We only do gluten free,100% contamination free foods. Vegan & vegetarian dishes along with an array of in-house smoked sustainable fish, nuts & cheeses. Part of my marketing plan is to find out if the population of Ottawa Ontario, has enough interest and would appreciate this type of take home food establishment. I think there are, although I have to convince my financiers.
Taste Buds (me) has 10+ years of experience in developing recipes, tried, tested, delicious and all gluten free. I know of the close to two hundred establishments that offer gluten free products in Ottawa, but I am only aware of one that guarantees 100% contamination free "Caprese Ristorante Italiano" 696 Bronson Ave. Great food reviews.
Did you know that when wheat products are produced any where near gluten free products, the wheat remains air-borne for up to six hours.
Recently in Wake County, USA a man was tried and convicted of fraud, is to serve 8 to11 years behind bars for advertizing Gluten free products that were contaminated, dozens of people became very ill........... Buyer Beware.
I am a Celiac 10 years & vegetarian for over 35+ years, I have raised my 2 children (now healthy adults) vegan /vegetarians. I have been a chef/cater and diet consultant for many years and I feel it is time to venture out and create wonderful delicious gluten free food for the Ottawa public.
If you or anyone you know has Celiac disease,or prefer a gluten free diet please spread the word, about this new & exciting food shop that I hope to open in late spring 2012. If you can help out, post your opinions please.

A simple & delicious recipe
Almond-butter,Chocolate Chip Pumpkin Seed Cookies
Please check labels to insure all products you are using are gluten free
Preheat the oven to 350 degrees, line 2 baking sheets with parchment paper
1 cup almond-butter
1/2 cup organic cane sugar
1/2 cup pumpkin seeds ( roasted -unsalted)
1 cup semi sweet chocolate chips
1 egg
Mix all ingredients in a medium size bowl, roll dough into 1 inch balls and place on a the cookie sheet, press balls with fork to slightly flatten, pop in the oven for 12 to 15 minutes. Let cool on cookie sheet for a few minutes, remove cookies gently an place on cooling racks.
